Q:
If I copy a pattern to an empty one and change the drum sound, it changes to the previous one.
A:
The Preset Phrases have phrase voices stored with them so that the drum program the programmer intended will be called automatically. If you want to change the drum kit that the copied preset phrase uses, go to Pattern Mode, press F5 Tr Vce3 -Track Voice , and set the Phrase Voice parameter for the track with the preset phrase to Off. You can then select any voice you want.
If you select voices in Pattern Mix mode, they will be stored with the Mix. If you select a Voice in Rec Setup, that Voice will also get stored as the Phrase Voice for that Phrase. So if the parameter in F5 is set to on whenever that phrase is called up it will call up the Voice you set in Rec Setup. When you are working on your own material you should usually set the Phrase Voice to Off (unless you work with the preset drum phrase a lot). The Phrase Voice is more meant for the preset drums and third party developers who want to create libraries of phrases that play correctly automatically.
