What you need is a latching pedal. Most of these are small switch style pedals so they are neither sustain ( piano pedal like ) or volume pedals.

These switches work so when you press the pedal once then the Leslie turns on and stays on until you press the pedal again. There are many companies who make a latching pedal, but Yamaha does not.
