How can I change what screen pops up when I double-click a MIDI region in Steinberg Cubase 5.x ?

Go to Edit - Preferences - General - Editors, and select the appropriate editor from the pull-down menu. Also, make sure Save with Song is checked on the bottom. Hit OK, and save the song.
