When I try to automate a Plug-In while Pro Tools is playing, the digital video stops when I start moving parameters around. Video Playback resumes as soon as I let go of whatever parameter I am manipulating.

This is a limitation of using QT video with PT. When you click on a plug-in control there is no way for PT to give time to QT to update its window. The solution to this is to use an external controller such as HUI, ProControl, or a MIDI controller to do the automation.
