When I run only one mic into my Marantz CDR300 portable CD Recorder, it only comes out one channel. Is there a way to make it come out both channels with only one mic?

Yes! The switch above the microphone inputs that says L/R and L+R does this.
L/R means you're using a stereo microphone configuration (left input will be left, right will be right).
The option you'll want to use is L+R, it means both inputs will be recorded on both left and right channels, panned center. So you can use either or both inputs at the same time.
