I think I'm doing this correctly but want to make sure, as it is lengthy process to install a library this big. On the DVD there are two folders – one for "Instruments" and one for "Samples". I'm unstuffing the contents of each folder seperately. I think I'm supposed to put the "Instrument" contents in the Logic Audio folder for EXS, and then the "Samples" can remain wherever I want them as long as I set the path for EXS. Is this correct?

You are right about this, although it is recommended to have the .exs instruments in logic's "sampler instruments" folder
(please note the restriction of five directory levels here) you can also have it on any location and just place an alias into Logic. The samples can reside on any volume you think convenient, but should not be on the system disk (or the disk containing the swap file) and on the fastest available drive(s).
