I plugged a sustain pedal into my Korg K61 and its backwards: sustains when the pedal is NOT pressed, and stops sustaining when I push it down.

The K61 auto-senses pedal polarities on power-up. Simply turn off the K61 make sure your pedal is connected (and DON'T press it down) and turn the keyboard back on. It will sense the polarity of the pedal and set that as the UP (sustain OFF) position.
