My mixes don't sound the same in iTunes as they do in my recording software.

iTunes has some features that change the sound. These are on by default.

Go to the iTunes menu on Mac, or the Edit menu on Windows, and choose Playback.

Turn Sound Enhancer and Sound Check off.
