You can only use one arpeggio at a time, however you can record the arpeggios to a track by going to Rec Setup and pressing F4 to making sure that the note icon is visible. Then when you record your track it will record the output of arpeggio to the track. Then you can go and select rec for a different track, select a different arp and record it.
